Basil Glazed Chicken - Recipe


Basil Glazed Chicken

Serves: 4

Cooking Time: 15 min

What You'll Need:

4 boneless, skinless chicken breast halves
1 teaspoon salt
1/4 teaspoon freshly ground pepper
1 tablespoon olive oil
2 tablespoons balsamic vinegar
1 tablespoon honey
2 tablespoons chopped fresh basil

What To Do:

Sprinkle both sides of chicken with salt and pepper.

In a large nonstick skillet over medium-high heat, heat oil.  Add chicken; cook 5 minutes or until lightly browned. Turn chicken, and cook 6 minutes or until done. Stir in vinegar, honey, and basil; cook 1 minute, turning chicken to coat with glaze.

Heavenly Lamb Stew - Recipe



Heavenly Lamb Stew

Serves: 4

Cooking Time: 50 min

What You'll Need:

2 tablespoons vegetable oil
2 pounds boneless leg of lamb, cut into chunks
1 1/2 teaspoons salt
1/4 teaspoon black pepper
1 small onion, chopped
2 garlic cloves, minced
1 teaspoon ground cumin
1 (17-ounce) can apricot halves in heavy syrup, juice reserved

What To Do:

In a soup pot over medium-high heat, heat oil; add lamb, salt, and pepper. Cook 7 to 10 minutes, or until lamb is browned, stirring occasionally.

Stir in remaining ingredients. Reduce heat to low, cover, and simmer 40 to 45 minutes, or until lamb is fork-tender.

Notes
Like most stews or saucy dishes, we like to serve this over hot cooked rice, noodles, or potatoes so none of the heavenly sauce gets lost!

Homemade Butter Cookies - Recipe


Quick Homemade Butter Cookies

Cooking Time: 30 min

What You'll Need:

1 pound (Approx 450 gms) butter, slightly softened
1 cup sugar
5 cups all-purpose flour
1/2 teaspoon salt

What To Do:

Preheat oven to 350 degree F. 

In a large bowl, beat the butter and sugar with an electric mixer until well mixed. Stir in the flour and salt. 

Divide dough in half. Roll out each half on a lightly floured surface to 3/8-inch thickness. Using cookie cutters or drinking glasses, cut into desired shapes. Place shapes on ungreased baking sheets and prick the top of each with a fork.

Bake 25 to 30 minutes, or until lightly browned. Cool completely.

Makes about 80 cookies.

Notes
Enjoy these as is, or decorate as desired. Add sprinkles while still warm, but add frosting after cookies have completely cooled.
